Wok shape and material are both shaped by a mismatch between traditional wok design and how most home kitchens are actually equipped — worth understanding before assuming the traditional option is automatically correct.
Round-bottom vs. flat-bottom
Traditional round-bottomed woks are designed for high-output gas ring burners common in professional and traditional Asian kitchens, where the wok sits directly in a cradle over intense, evenly distributed flame. On a standard home stove — especially electric or standard-output gas burners — a round-bottomed wok doesn't sit stably without a separate metal ring stand, and often can't get hot enough across its surface to replicate true high-heat wok cooking. A flat-bottomed wok is generally the better practical choice for most home kitchens, since it sits stably and makes better direct contact with a home stove's more limited heat output, even though it's a compromise from the traditional round-bottom design.
Carbon steel vs. cast iron vs. nonstick
Carbon steel is the traditional wok material — relatively lightweight, heats up and cools down quickly, and develops a natural nonstick seasoning layer with use and proper care, similar in principle to cast iron. Cast iron woks heat more slowly and retain heat longer, which changes the cooking dynamic somewhat from the quick, high-heat responsiveness traditional wok cooking relies on, though it's a durable, capable option. Nonstick woks are the easiest to use and clean with no seasoning required, but can't handle the very high heat traditional wok cooking techniques use without risking damage to the nonstick coating, and don't develop the flavor some cooks associate with a well-seasoned carbon steel or cast iron surface over time.
What seasoning actually does
Seasoning is the process of baking thin layers of oil onto the metal's surface through repeated heating, which polymerizes into a smooth, naturally nonstick coating over time and use. This is a real chemical transformation of the oil, not just a temporary residue, and a well-seasoned carbon steel or cast iron wok becomes genuinely more nonstick and easier to cook with the longer it's properly used and maintained, unlike a factory nonstick coating that only degrades over time rather than improving.
The one thing people forget
Dry a carbon steel or cast iron wok thoroughly and immediately after washing, and add a very thin layer of oil before storing, to prevent rust — these materials, unlike stainless steel or genuine nonstick coatings, are genuinely prone to rusting if left wet or stored without any protective oil layer, and rust can strip away seasoning that's taken real time and repeated use to build up.
