Cutting board material has a real, researched food safety dimension — and the conventional wisdom on it has shifted more than most people realize.
The old assumption, and why it's been challenged
For years, standard food safety guidance favored non-porous plastic over wood, reasoning that a smooth, sealed surface is easier to clean and sanitize than a porous one. Multiple peer-reviewed studies going back decades — and more recent research, including a 2025 study in the Journal of Food Protection — have found the opposite in practice: wood, particularly dense hardwoods like maple, can have genuine bactericidal properties. The theory is that wood's capillary structure draws bacteria and moisture down into the fibers, where they die off as the board dries, while a plastic board's surface — especially once scored by repeated knife cuts — develops grooves where bacteria can hide and are harder to fully clean out.
It's not a clean, one-sided verdict
This isn't settled science pointing entirely one way. At least one study found that new, unseasoned wooden boards can also carry high bacterial counts before they've built up the wear and oils that seem to support wood's protective effect. Wood type matters too — dense, tight-grained hardwoods like maple perform differently than softer, looser-grained woods, which can split and form their own bacteria-harboring grooves. The honest summary: wood has real, researched advantages that were long underestimated, but "wood is simply safer than plastic" oversimplifies a more mixed picture.
What actually matters regardless of material
The practice most consistently recommended across food safety sources, regardless of which material you choose, is using separate boards for raw meat and for ready-to-eat foods like produce, bread, and cheese — reducing cross-contamination risk in a way that matters more than the wood-vs-plastic debate itself. A deeply scarred, heavily grooved board of either material — plastic or wood — becomes harder to clean effectively over time and is worth replacing once cuts and grooves become significant, rather than assuming any board lasts indefinitely regardless of wear.
The one thing people forget
Wooden boards need occasional oiling (with food-safe mineral oil, not cooking oils that can turn rancid) to prevent cracking and to maintain the surface condition that supports their protective properties — an unmaintained wood board that's dried out and cracked doesn't perform the same way a properly cared-for one does.
