The name "air fryer" is genuinely a bit misleading — understanding what it actually does mechanically explains both its strengths and its real limitations.
What's actually happening inside
An air fryer is, mechanically, a small, high-powered convection oven: a heating element and a fan rapidly circulate hot air around food sitting in an elevated, perforated basket, cooking and browning the surface without submerging it in oil. It's not "frying" in the traditional sense of cooking food immersed in hot oil — it's closer to very efficient, compact convection baking, which is exactly why it can produce a crisp, browned exterior with a small fraction of the oil a traditional deep fryer needs.
What it's genuinely good at
Foods that are naturally suited to convection cooking — vegetables, chicken wings, frozen foods designed for oven preparation, reheating leftovers to restore crispness — tend to do very well, often faster than a full-size oven thanks to the smaller cooking chamber and more concentrated hot air circulation.
What it doesn't do
Because there's no oil bath, it can't replicate a truly deep-fried texture on foods that genuinely rely on oil immersion for their result — battered foods and certain doughs, for instance, cook and brown differently than they would in real hot oil, since there's no liquid oil transferring heat and moisture in the same way. It also has real, limited capacity — the compact size that makes it fast and efficient also means smaller batches than a full oven, often requiring multiple rounds when cooking for a larger group.
The one thing people forget
Don't overcrowd the basket. Air frying depends on hot air circulating freely around each piece of food — packing the basket too full blocks that airflow, and the result cooks more like a crowded, steamy oven than an actual air fryer, with soggier, less evenly browned results than the same food cooked in smaller batches.
