How to Get Started Brewing Kombucha at Home

The one reliable way to tell mold from normal (if strange-looking) SCOBY growth: texture, not color.

Kombucha brewing looks alarming to almost every beginner at some point, since a healthy, properly fermenting batch genuinely looks strange — the real skill is knowing which strange things are normal and which one specific sign means starting over.

Texture, not color, is what actually distinguishes mold from normal growth

A healthy SCOBY (the "mother" culture that ferments kombucha) is already a strange-looking, viscous, discolored mass even when working perfectly — stringy brown yeast strands hanging in the liquid, sediment at the bottom, cloudy patches, and a new baby SCOBY layer forming on the surface are all normal parts of the process, not warning signs. The one reliable, non-negotiable warning sign is mold, and the way to tell it apart from normal (if odd-looking) growth is texture: mold is fuzzy and dry, with clearly defined, often circular edges, while every normal SCOBY formation, however discolored or unusual it looks, is smooth, rubbery, stringy, or slimy — never fuzzy. Color alone is misleading, since both normal growth and mold can appear white; fuzziness is the deciding factor, not shade.

If you find actual mold, the entire batch and culture must be discarded

If mold is confirmed by its fuzzy texture, the standard, universally repeated guidance is to throw away the entire culture and liquid in that container — there's no reliable way to scrape off just the moldy portion and safely salvage the rest, since mold produces microscopic spores that can spread through the liquid well beyond what's visibly affected. Starting over with a new culture, rather than attempting to save a contaminated one, is the safe response, not an overreaction.

Maintaining low pH is the actual defense against mold in the first place

Kombucha's acidity — a properly fermenting batch should be quite acidic — is what naturally prevents mold from taking hold, since mold struggles to grow in a sufficiently acidic environment. Using enough starter liquid (kombucha from a previous successful batch, not just plain tea) when starting a new batch is what establishes that protective acidity quickly; too little starter liquid leaves the new batch at a higher pH for longer, creating a window where mold is more likely to take hold before the fermentation itself lowers the pH enough to become self-protecting.

Equipment cleanliness matters, but bleach and soap residue can harm the culture

Brewing equipment should be genuinely clean, but many kombucha brewers specifically avoid soap and bleach residue on equipment that will contact the SCOBY and liquid, since residue from these can harm or kill the beneficial bacteria and yeast the culture depends on — hot water and, when deeper cleaning is needed, a thoroughly rinsed vinegar-based cleaning approach is commonly recommended instead of soap for anything directly contacting an active culture.

The one thing people forget

Never store a SCOBY in the refrigerator, since the cold significantly slows or halts the fermentation activity that keeps the culture's protective acidity active, and refrigeration is a commonly cited contributing factor in mold problems — a SCOBY not currently brewing should be kept in a "SCOBY hotel" (a jar with enough sweet tea to keep it fed) at room temperature, not refrigerated as if it were a food item to simply be stored cold between uses.
